Anyway, even though the weather hasn’t really been wintery or cold around here (right now, it’s 65 degrees), I have been in the mood for soup.
It’s warm, comforting and usually pretty good for you and filled with veggies.
Broccoli cheese soup is something that I always enjoy but have never made. I’m not a huge broccoli person, but I decided to pick some up at the grocery store the other day. Then, I found this super easy, super creamy recipe on foodgawker for broccoli cheese soup.

It’s got 7 ingredients and can be whipped up in a flash!
For my next soup, I recently made an old classic in my family: my mother’s chicken tortilla soup.
It’s also comforting, full of veggies and chicken and has a kick from a can of rotel. Also, the crunch of homemade tortilla strips, fresh avocado and shredded cilantro make the soup a fantastic meal.
And it makes a big pot, which means lots of leftovers!
