Almond Shortbread

So, as I mentioned in my last post, I had a wonderful culinary gift delivered to my door a few weeks ago.

I have been wanting one of these mixing magic machines for quite a few years. And finally I was able to combine some wedding gift cards with some cash to get one.

It is definitely as cool as I thought it would be.

It’s makes me feel like a lazy cook sometimes, but it’s also increased my baking street cred by like a thousand.

One of the new baked goodies that I made with it was almond shortbreads (pictured here on my new fancy and amazing Silpat silicone sheet).

These delicious cookies are perfect for tea time and perfectly British…which is why I love them.

And they were incredibly easy to whip up. The almond extract does wonders to add that warm, nutty taste. Eating one of these dandies is kind of like getting a hug from an almond… and who wouldn’t want that?

And company will love them! They’re a great treat to take to a friend’s house, which is what I did with half of mine.

And they’re even better with a dollop of freshly whipped cream and a sprinkle of fresh blueberries, which is how my husband and I ate them…other than the 3 or 4 cookies that we each ate fresh from the oven.

 
Enjoy with a cup of English Breakfast or Early Grey tea…or just on their own!
