Welcome back to our week full of fun and tasty Blogsgiving Dinner ideas.

Today, we’re on to entrees, side dishes and salads. Our meal is well on its way.

I’ve got a Thanksgiving-inspired recipe that is simply easy to make and simply delicious. I really enjoy Thanksgiving, but one thing that I don’t like is spending all day in the kitchen. Even though I love cooking, I love being able to hang out with family even more.

This Mushroom Spinach Farro is a nice quick and healthy play on your Thanksgiving stuffing. You can even make it gluten-free by subbing brown rice or quinoa for the farro.

If you’ve haven’t hopped on the farro train yet, Thanksgiving is the perfect time to do so. Farro is a wheat-based grain that’s the perfect consistency (soft with a little chew), and it’s basically impossible to mess up.

  1. This looks delicious as a side, dressing sub, or even a vegan entree (without the Parm!). You’re so right that having easy dishes peppered into the menu is a welcome break on this busy holiday!

  2. If there is ever a time to introduce a family member to something new and awesome, it’s Thanksgiving, right? It adds the air of specialness and I really love that. Like the others here, I haven’t gotten into farro yet either, but I think I’ll have to now.

  3. YUM. I haven’t had farro in a while, and seeing these photos and reading about this dish really makes me want to try it out again. And while I’m not the biggest mushroom fan, I can see myself enjoying this dish because of everything and how it comes together! Nice work!
