It’s really funny how coincidental things are sometimes…but it’s more often than not meant to be miracles, if you ask me.

We go into our daily lives thinking that this world has limits, and amazing things happen (if we’re looking around enough to notice them).

Although these past few weeks have been slammed with full days of life things, so many everyday miracles have been occurring around us.

1. I get to keep doing this blog, and you wonderful people out there read it and hopefully cook more (and maybe even healthier) because of it. How cool is that?

2. I took a CPR course last night to prepare for the coming of my first niece and realized both how lucky I am to be alive and how I just can’t wait to get to know this little one (due in the next month).

3. After being on the house hunt officially for only a few weeks, we’ve nabbed ourselves a beautiful home that I can’t wait to move in to (there’s lots of natural light, so I’m already thinking about blog photos). Also, we’re going to still be in Raleigh, but totally in the country. Ya’ll- I feel like I might turn into Pioneer Woman or something. I’m talking cows and trees with no end and lots of land!

So, in the midst of all this goodness, I give you the South Side cocktail, which is ever more appropriate since in a few months, we’ll moving to the south (country) side of this dynamic city we’ve come to call home.

This cocktail is just how I like it: simple, only a few ingredients and a tad sweet. From the gin to the lemon and fresh mint, it’s super refreshing and beckoning those humid days of summer.

This guy won’t require you to get a bunch of expensive ingredients (I did mention we’re buying a house, right?!), but it comes together perfectly nonetheless.

I just can’t wait to drink one of these on my back porch soon!
