You’ll have to excuse the title of this post…I just couldn’t help myself.
Today, I get to share a recipe that’s new to our meal plan, but is already making a big splash.
It’s got a low ingredient list, lots of great Indian flavors and is quite healthy, too.
And it showcases the humble chickpea. Even canned chickpeas taste meaty and delicious in this Chickpea Spinach Curry.
Also, one of my favorite spice blends, garam masala, is a key ingredient in this recipe. If you don’t have any in your spice cabinet, then I highly suggest spending a few bucks to get some (you can find it at grocery stores or Indian grocery stores). It is usually comprised of a lovely blend of peppercorns, cloves, cinnamon, nutmeg, cardamom, bay and caraway.
You’re going to love the taste of Indian spices in this simple dish. It’s perfect for weeknight family dining on top of basmati or brown rice.
