Whole Foods Weekday Takeaway: Week 2

Good news, guys.

Whole Foods is letting me try out the Weekday Takeaway for several weeks, so I get to show you all of the tasty meals that I’ve been able to try.

And I know for sure that the first week wasn’t a fluke, and they’re all quite delicious. I’ve also had some super busy weeks lately, so it has been a lifesaver having these guys in my fridge to heat up and enjoy a home-cooked, healthy meal in minutes.

So, here’s what was in my meals for week 2 of the Weekday Takeaway:

Turkey Chili Mac with Salad

What can I say about this one? I felt a bit like a kid in a candy store eating this. Salty and cheesy and perfectly comforting, this turkey chili mac was fulfilling but balanced with a tasty salad with a (basil-flavored I think) ranch. I really love the homemade vinaigrettes and dressings that come in the meal plan. Oh, and I cheated and ate some of the bread with this meal.

London Broil with Roasted Potatoes & Carrots & Green Beans

I must admit that I’m not much of a red meat/steak person, but I really loved the roasted veggies and green beans in this meal. The meat was tender and tasty as well, and my husband enjoyed eating some of it, too.

Chicken Au Vin with Herbed Polenta Cakes

This was such a nice savory meal to have heated up in a few minutes. The chicken was moist and the caramelized onions and cooked carrots were nice on the side. The herby polenta rectangles were also filling and flavorful.

Ratatouille with Goat Cheese

This was probably my favorite meal of the week with a chunky ratatouille of zucchini, tomatoes, eggplant and squash. There was plenty in this meal, and I enjoyed eating it for a few meals afterward with garlic cous cous underneath. Oh, and the goat cheese was the perfect topping!

Butternut Squash & Sage Tortellini & Caesar Salad

What a nice finish to this week’s meal with this creamy, sage-y tortellini. Every pasta that I’ve had in the Weekday Takeaway has been so good. This one was cheesy but still full of veggies and paired with a nice salad (not pictured).
