Peanut Butter Sorghum Bars

Snacks…how do people avoid them?

I know I’ve heard people say that they don’t like/care for/have time for/eat snacks. And I just don’t get it.

Maybe I’ve just always been a snacker or maybe it’s all because of chips, but I really love snacking. It’s nice to have a mid-morning snack to power through until lunch, and I also enjoy an afternoon snack (since I usually don’t make dinner until 6:30 or 7).

I can definitely understand why people don’t snack — it’s not the healthiest of habits…but why not?! So, I’m here to offer you a healthier option. Now, this is no celery stick and half of an apple (which I also snack on occasionally), but it’s not a piece of that two-day old office cookie cake either.

These three-ingredient Peanut Butter Sorghum Bars would be the perfect thing to make at the beginning of the week and snack on all the way through. The recipe called for honey, but I ran out and ended up turning to my old friend sorghum. I love the deep, rich flavor that it lends.

If you don’t have sorghum, get out to your local farmers market (like the Raleigh State Farmers Market) or local foods store and search out some. It’s worth it!

This recipe also utilizes our Ingredient of the Month: Oats!
