I’ve got a few questions for you today.

Have you ever been to a church potluck?

Do you like buttery, tasty casseroles?

Do you have any Ritz crackers hanging around in your pantry?

Can you be open to a recipe that is amazing but does not look as much in photos?

I’ll be upfront, this Summer Squash Casserole is not my typical think fruitful recipe. It’s got a few more ingredients than I would normally like, and it’s got a lot of butter and Ritz crackers (which I’m not dogging on, but it’s not just my typical cooking jam).

Although, this recipe is totally a think fruitful recipe in that it utilizes fresh produce (ahem, the Ingredient of the Month), and it tastes absolutely delicious! Flavortown meet the potluck recipe of your dreams!

I’m pretty sure I’ve had this casserole at a church potluck at some point in my past, and I’m super glad it’s back in my life.

Believe me: It’s everything you want it to be. Creamy, crunchy, buttery and surprisingly complex.

P.S. I didn’t have any white bread, so I used leftover levain for the “breadcrumbs” on top.
