Simple Saturday: Bacon Roasted Brussels

Coming from someone who has looked at a dozen apartments/townhomes/homes for rent in the past 2 weeks, house hunting has its ups and downs.

There’s excitement in zooming around the internet finding all the options and dreaming about your future living place.

But there’s also disappointment when the place you see in front of you looks nothing like it did in the pictures…and there’s cat poop in a litter box in your future (well, you thought it might be your future) master bathroom.

Thankfully, my husband and I have wonderful (and probably too-nice) relatives who are currently letting us crash at their place while we look. And thankfully I’m not working right now so I have time to go look at places all over the city. But it’s hard work, let me tell you. Especially when you’re no longer a student and like your creature comforts (a kitchen with nice countertops, updated appliances and a few windows are some of mine).

But I’m sure we’ll find our spot soon (and I’ve got some thin mints to get me through it all), but let’s just say making these Bacon Roasted Brussels is a cinch compared to house hunting.

You know I like healthy and vegetarian stuff lots, but it really is true that bacon makes Brussels sprouts just oh so smokey, savory and delicious. (I’ll be sharing the recipe for the dish on the left next week.)

Here’s how you make these:

1. Preheat your oven to 400 degrees.

2. Wash the sprouts, remove their outer leaves and cut them in half. Cut a few strips of bacon into small pieces (about 1/2-inch by 1/2-inch).

3. Lay both on a baking sheet and pour over a tablespoon or two of olive oil, and add sea salt and pepper. Then, mix everything together with your hands and roast for 20-30 minutes or until bacon is crisp and Brussels are lightly charred.

-Roasted with olive oil, salt, pepper and garlic

-Roasted in balsamic vinegar

-Caramelized with shallots and bacon
