This one comes together fast and is a vegetarian wonder. Chickpeas, spinach and tomatoes come together in a garam masala and coconut milk sauce.

Coconut Red Curry

You’ll soon figure out that curry paste and coconut milk are an incredible curry combination! In this recipe, pepper, potatoes, eggplant, peas or whatever veggies you have on hand make the curry filling and exciting.

Butternut Squash Curry

Butternut squash and sweet potatoes make an appearance in this curry with turmeric and lots of coconut milk for a creamy and spicy taste.

Red Curry with Fish

This one is a weeknight winner and takes your favorite white fish and transforms it into a flavor-packed protein. The fish cooks quickly in the curry vegetable sauce, so all it needs is a bed of rice.
