Pork Lettuce Wraps

Remember when I wrote about trying different meal services?

Well, I can’t remember if I ever reported back, but we found one that we like and order on occasion. I had kind of written off most of them, since I love to shop for and prepare food, but Home Chef has been a great fit for us.

It’s about $60 per box (this is not an ad, btw, but you can use this link to get $30 off: https://www.homechef.com/invite/Ma9pMCovgVy6), and we usually get the meat box so we can take advantage of the good price for 3 meat meals.

One week we got these Pork Lettuce Wraps in our box, and we loved them. So much so that I’ve made them a second time. I love the idea of a good crunchy, crisp lettuce wrap taking me back to fun, special dinners at P.F. Chang’s growing up.

This recipe is perfect for family meal night or a weeknight dinner because it’s low on ingredients and super easy to prepare.

Grab a beautiful head of butter lettuce at your farmers market or grocery store, some ground pork, hoisin sauce (in the Asian section of the grocery store), green onions, ginger, cilantro and sriracha, and that’s a wrap!

Ingredients

  • 1 head of butter lettuce
  • 12 oz. ground pork
  • 3 tsp. Sriracha
  • 1 tbs. cilantro, chopped
  • 2 green onions, sliced and separated whites from greens
  • 2 oz. hoisin sauce
  • 2 tsp. fresh ginger, chopped

Instructions

  1. Separate the leaves of lettuce (and wash if not already pre-washed) and set aside on a plate.

  2. Place a medium nonstick pan with 2 tsp. grapeseed (or other) oil over medium-high heat. Add ground pork to hot pan and stir occasionally, breaking up with a wooden spoon, until cooked through (8-10 minutes).

  3. Add hoisin sauce, Sriracha (to taste), white portions of green onions and ginger to pan with pork. Stir occasionally until slightly thickened, 3-4 minutes. Remove from burner and season with a pinch of salt.

  4. Put lettuce cups and pork mixture, topped with cilantro and green parts from green onion, on table. Assemble lettuce wraps by placing a few spoonfuls of pork mixture into lettuce cup and folding a bit like a burrito, then eating.
