Apple Crumble Cookies

It’s fall, y’all!

Ok, so maybe it’s not quite fall yet, but September is here and with it a glimpse of some cooler temperatures. I don’t know about you, but I’m getting a little lazy on my garden watering and general landscaping upkeep.

Summer’s heat has me a little tired and ready for some sweater weather…and apple things!

I’m always in the mood for a good cookie and this is a GOOD COOKIE!

Jamie Oliver knocked it out of the park again with this 5-ingredient recipe that makes a cookie unlike anything I’ve ever had before.

It’s got the taste and texture of an apple crumble and it’s dead easy to throw together. 20 minutes and boom: You’ve got cookies!

All you have to do ahead of time is pick up a bag of dried apples at the grocery store (I like Granny smith, myself).

I hope we are all able to savor the last of summer and ease into fall, enjoying this special changing of the guards in season.

Apple Crumble Cookies

Ingredients

  • 100 g or 3.5 oz. dried (Granny smith) apple
  • 1 cup self-raising flour (or 1 cup AP flour with 1 1/2 tsp. baking powder and 1/4 tsp. salt mixed in)
  • 7 tbs. cold unsalted butter
  • 1/2 cup sugar
  • 1 egg

Instructions

  1. Heat oven to 400ºF. Line baking tray with parchment paper or a Silpat.

  2. In a food processor, blend the apple until finely chopped, then add in the flour, cubed butter, sugar and a pinch of sea salt. Mix to fine crumbs for 1 minute, then remove 3 tbs. of the mixture and set aside. Pulse in the egg until combined.

  3. Divide dough into 18-24 pieces (or use a cookie scoop), roll into balls, then press down lightly with your thumb to make them into rounds with a dip in the middle. Sprinkle the reserved mixture on top of the dip in each cookie, lightly pressing it in.

  4. Bake for 8-10 minutes, or until lightly golden. Leave to cool slightly, then transfer to a wire cooling rack.
