Apple Crumble Cookies

Ingredients

  • 100 g or 3.5 oz. dried (Granny smith) apple
  • 1 cup self-raising flour (or 1 cup AP flour with 1 1/2 tsp. baking powder and 1/4 tsp. salt mixed in)
  • 7 tbs. cold unsalted butter
  • 1/2 cup sugar
  • 1 egg

Instructions

  1. Heat oven to 400ºF. Line baking tray with parchment paper or a Silpat.

  2. In a food processor, blend the apple until finely chopped, then add in the flour, cubed butter, sugar and a pinch of sea salt. Mix to fine crumbs for 1 minute, then remove 3 tbs. of the mixture and set aside. Pulse in the egg until combined.

  3. Divide dough into 18-24 pieces (or use a cookie scoop), roll into balls, then press down lightly with your thumb to make them into rounds with a dip in the middle. Sprinkle the reserved mixture on top of the dip in each cookie, lightly pressing it in.

  4. Bake for 8-10 minutes, or until lightly golden. Leave to cool slightly, then transfer to a wire cooling rack.
