Strawberry White Chocolate Scones

Ingredients

  • 2 cups flour
  • 1/4 cup sugar
  • 2 tsp. baking powder
  • 1/8 tsp. salt
  • 1/3 cup butter, chilled
  • 1/2 cup heavy whipping cream (plus extra for brushing on top)
  • 1 egg
  • 1.5 tsp. vanilla extract
  • 1/3 cup white chocolate chips
  • 5 strawberries, washed, hulled and diced

Instructions

  1. Heat oven to 425 F. Prepare a baking sheet with a Silpat or parchment paper.

  2. In a large bowl, stir together the flour, sugar, baking powder and salt. Cut the butter into 1/2" cubes and distribute over the flour mixture. With a pastry blender or two knives used scissor fashion (or just using your fingers), cut in the butter until the mixture is like coarse crumbs.

  3. In a small bowl, stir together the cream, egg and vanilla. Add the cream mixture to the flour mixture and stir until combined. Fold in the diced strawberries and white chocolate chips.

  4. Dust flour on the counter or a cutting board and pat the dough into a 1/2" thickness. Grab a biscuit cutter or glass and dip in flour, then cut out rounds from the dough (without twisting cutter) and place spaced out on prepared baking sheet.

  5. Brush the scones lightly with cream and bake for 13-15 minutes, or until lightly browned. Cool scones on a wire rack.
